My fiance and I LOVED this recipe - this doesn't say a whole lot coming from me because I am in love with lentil soup in general. However, my fiance doesn't even like lentils and was fairly certain that he wouldn't like the soup. Wrong! This recipe is, again, from the So Easy cookbook.

2 tsp evoo
1 small onion, chopped
1 large carrot, peeled and chopped
2 very small potatoes, chopped
2 garlic gloves, minced
12 cups low-sodium chicken broth
16 oz lentils
1 tsp dried basil
1 tsp dried thyme
1 tsp salt
6 cups chopped kale leaves
Heat the oil in a soup pot over medium heat and add the onion. Cook, stirring occasionally until softened and translucent. Add the carrot, potatoes and garlic and cook, covered, stirring occasionally, until the carrots are softened. Add 12 cups of the broth, the lentils, basil, thyme, and salt and bring to a boil. Reduce the heat to low, add the kale, and cook until the lentils are tender (30-35 minutes).
